Hot Pepper
Slow to start and then relentless. A single 3-gallon pot gives you more chillies than most households can eat.
- Pot size 3 gallons minimum
- Soil depth 12 inches
- Spacing 18 inches
- Days to harvest 80
Peppers are the crop that rewards patience. They need a long indoor start, warm soil, and full sun, and they do nothing for the first six weeks outside. Then they flower, set, and produce for two months. In short-season zones the whole game is starting early enough — eight weeks indoors is not optional.
How to grow it
- Start indoors 8 weeks before last frost at 75–85°F. Pepper seed germinates poorly in cool rooms; a heat mat is worth it.
- Pot up once before transplanting. Peppers transplant better after they have a developed root ball.
- Wait until nights are reliably above 55°F. Cold nights cause flower drop.
- Feed with a tomato-type fertilizer at flowering. Too much nitrogen gives you a leafy, fruitless plant.
- Support the pot in wind — a fruiting pepper plant is top-heavy and snaps at the stem.
What goes wrong
- Flower drop: nights too cold, or the plant is dry. Both are fixable within a week.
- Sunscald: pale papery patches on fruit facing direct sun. Provide light afternoon shade in zone 8+.
- Aphids indoors before transplant: rinse the seedlings and check the undersides of leaves.
Harvesting
Green fruit is edible but thin and grassy; wait for full color — heat and flavor both peak at maturity.
- Cut the stem rather than pulling — pepper plants hold fruit tightly.
- Harvest green for cooking, or leave to color for drying and sauces.
- String ripe peppers and hang them to dry; they keep for a year.
Varieties that work in pots
